Pineapple Sauce

Personally I think that pretty much everything tastes better all sauced up… a good sauce can make any ordinary dish extraordinary, which is why I believe food is better dripping in it! This sauce is a pineapple sauce I have been making for a long time. It is sweet and spicy and tangy all at the same time. The best part is it’s good with almost everything. Use it as a marinade or on top of grilled chicken or tofu, on a lighter fish like halibut or cod, as a delicious stir-fry sauce, or even as a spread on your favorite sandwich.

Ingredients
1 cup crushed pineapple + juice
½ teaspoon red pepper flakes
½ teaspoon minced ginger (fresh)
1/8 teaspoon black pepper
1 teaspoon cumin
2 tablespoons brown sugar
2 tablespoons vinegar
2 teaspoons soy sauce or Tamari for a gluten free option
¼ cup water
1 teaspoon flour (for thickener)

Preparation

Mix together all ingredients except for water and thickener, and bring to a boil over medium heat.
Remove half the sauce and puree using a hand blender or regular blender.
Return to pot and add water and thickener mixture, stirring constantly until the mixture thickens.
Add to any type of protein dish or stir-fry. Experiment and enjoy!!
