Ten-minute Gourmet Ramen

I love making big elaborate meals from scratch, but sometimes I just don’t have the time or energy to make it happen! When life happens to get in the way I try to take something that is quick and easy and dress it up with fresh veggies and a few extras to make it more nutritious and extra delicious. In this case I made ramen a little more gourmet by starting with Lotus Foods delicious individual ramen packets and adding the goods to it. The perfect fast, comfort food for after a long day.

INGREDIENTS:

Lotus Foods Buckwheat & Mushroom Rice Ramen

1/4 cup baby bella mushrooms

1/4 cup dino kale

1 egg

1 small salmon filet

sprinkle of hemp seeds

sriracha sauce to taste

coconut oil for frying

Salt and pepper to taste

 

DIRECTIONS: 

Wash & chop mushrooms and kale into bite size pieces.

Heat coconut oil over medium heat in a frying pan. Add salmon filet skin first. Add a sprinkle of salt and pepper. Cover with a lid and let cook for 3-4 minutes. At that time check salmon and add mushrooms and kale to pan. Cook for an additional 3-4 minutes. Once salmon is cooked all the way through, remove salmon and veggies and set aside.

Boil water for ramen and follow Lotus Foods directions for cooking ramen and adding broth flavoring. Once cooked and in a bowl large enough to add more goodies too, set aside.

Rinse out frying pan and reheat with another dollop of coconut oil. Crack egg and cover with lid. Fry over medium heat until egg white is cooked all the way through, flipping once.

Add veggies into ramen bowl and mix to incorporate into noodles. Top noodles with salmon and fried egg. Sprinkle with hemp seeds and sriracha.

Say YES to ramen being nutritious and delicious! (So much better than the cup-o-noodles I remember from my childhood!)
